Mints

 

Mentha also known as mint is a genus of plants consisting of species and hybrids like peppermint (Mentha piperita), spearmint (Mentha spicata), Scotch spearmint (Mentha gracilis), corn mint (Mentha arvensis), apple mint (Mentha suaveolens) and many others. Beside their famous use as flavorings, mints or some of their artificially-synthesized ingredients are used in culinary applications, medicine, cosmetics, perfumes, insecticides, etc.

 

Peppermint and spearmint are among popular mints. While the major contributor to the characteristic flavor and aroma of peppermint is the chemical compound menthol (where the (−)-menthol assigned with the (1R,2S,5R) configuration is the main form of naturally occurring menthol), the spearmint’s flavor mainly comes from the chemical compound L-carvone (R-(–)-carvone) which has a much sweeter taste and significantly less strong cooling effect than menthol.
